That time life handed me lemons

And I decided there’s no better way to start this new blog off than with a post about – yes – lemon cupcakes.

And they were absolutely delicious. I took a recipe from The Hummingbird Bakery cookbook (which is my favorite) and gave it a little twist because in my opinion their instructions didn’t include enough lemony goodness. And when I crave lemon cupcakes, I don’t just want regular cupcakes with a hint of lemon. I need to taste the sourness of lemons. (Just a little, though. That’s where 120 grams of sugar comes in.) So besides the two tablespoons of lemon zest they suggest, I also added the juice of half a lemon to the batter as well as the buttercream frosting.

Also, I didn’t want to throw away a perfectly good lemon just because this recipe required me to zest one.

And then I ate all of the leftover frosting with a spoon. Nice to meet you!
